Ammonia

Ammonia is used by the food industry, in confectionery and baking as a leavening agent in doughs and is activated when heated and behaves like soda and baking powder. Its annoying smell disappears after baking our dishes. A minimum amount of it is enough (1/2 kg) to make our sweet culinary creations tasty and crunchy. e.g. most recipes for Easter cookies call for ammonia.
